2 Ingredient Minty Thins

One of my favorite treats growing up were frozen Thin Mints. As soon as I could get my hands on a silver sleeve of those crunchy delicious mint cookies I would put them in the freezer only to devour the whole sleeve about an hour later once they had a thin layer of chilled frost on them. Mmmm….Frozen Thin Mints are truly on a level of their own.

A Healthy Childhood Staple

My daughter and I made our own healthier version of these sweet treats from scratch the other day. They turned out really good and only contain two ingredients! She even made them on her own later on when I was not looking.

  • 1/4 cup Enjoy Life Dark Chocolate Chips You can find these dairy free chocolate chips in the health food section at your local grocery store
  • 1-2 tsp Fresh Mint I used 2 tsp because I like these to be very minty.

Ingredients
  • 1/4 cup Enjoy Life Dark Chocolate Chips You can find these dairy free chocolate chips in the health food section at your local grocery store
  • 1-2 tsp Fresh Mint I used 2 tsp because I like these to be very minty.
Instructions
  1. Melt the chocolate chips in a microwave save bowl for about one minute. Stir halfway through to distribute the heat. The chips should be melted, not burnt, so this time will vary based on your appliance.
  2. Chop the fresh mint in a food chopper until fine.
  3. Mix the chopped mint into the melted chocolate.
  4. With a teaspoon, smoothe out half dollar sized dollops of the mint chocolate onto a piece of wax paper placed on a baking sheet.
  5. Freeze the dollops in the freezer. These freeze quickly so 10 minutes is all you need.
  6. Enjoy!
